You can do it by hand or with the help of a planetary mixer. <\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><strong>Add the hazelnuts:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Add the whole hazelnuts to the mixture and work it until they are evenly distributed.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><strong>Form the loaves:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Divide the dough into two equal parts.<\/li>\n\n\n\n<li>With lightly floured hands, form two loaves about 4-5 cm wide and place them on a baking tray lined with baking paper. Leave some space between the loaves as they will grow while cooking. <\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><strong>Brush and cook:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Brush the surface of the loaves with the beaten egg yolk.<\/li>\n\n\n\n<li>Bake in a preheated oven at <strong>180\u00b0C (356\u00b0F)<\/strong> for about <strong>20-25 minutes<\/strong>, or until the rolls are golden brown on the surface.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><strong>Cutting the cantucci:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Remove the loaves from the oven and let them cool for a few minutes, just long enough for them to firm up slightly.<\/li>\n\n\n\n<li>Using a sharp knife, cut the loaves diagonally, obtaining biscuits about 1-2 cm thick.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><strong>Second cooking:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Place the cut cantucci back on the baking tray, cut side up.<\/li>\n\n\n\n<li>Put them back in the oven for another <strong>10-15 minutes<\/strong> for the second cooking, until they become crispy and golden.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><strong>Cool and serve:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Let the cantucci cool completely before serving.
