
Ingredients (4 servings)
For the brownie dough:
- 200 g dark chocolate
- 150 g butter
- 150 g sugar
- 3 eggs
- 100 g cake’s flour
- 30 g unsweetened cocoa powder
- 100 g roasted hazelnuts, roughly chopped
- 1 teaspoon vanilla extract
- A pinch of salt
For the caramel glaze:
- 150 g sugar
- 80 ml fresh cream
- 50 g butter
- A pinch of salt
Directions:
How to prepare the brownie dough:
- Preheat the oven to 180°C (356°F) and line a 20x20cm square baking tray with baking paper.
- Melt the chocolate and the butter:
- In a double boiler, melt the dark chocolate with the butter, stirring until you get a smooth and homogeneous mixture. Let it cool slightly.
- Let’s make the dough:
- In a large bowl, whisk eggs and sugar until the mixture is light and fluffy. Add the vanilla extract and a pinch of salt.
- Gently mix the melted chocolate into the egg mixture using a spatula.
- Sift the flour and cocoa powder directly into the bowl and mix until you get a smooth dough.
- Add the chopped hazelnuts and mix everything together.
- Baking the dough:
- Pour the dough into the prepared pan and level the surface with a spatula.
- Bake in a preheated oven for about 25-30 minutes. The brownie should still be slightly soft in the center.
- Let the brownie cool completely in the pan before removing it.
Directions for the caramel glaze:
- Melt the sugar:
- In a small saucepan with a heavy bottom, melt the sugar over medium heat without stirring, until it becomes an amber color. You can swirl the saucepan slightly to distribute the heat evenly.
- Add the fresh cream:
- When the sugar is melted and amber in color, remove the pan from the heat and slowly add the cream, stirring constantly. Be careful: the caramel may bubble, so proceed with caution.
- Incorporate butter and salt:
- Add the butter and a pinch of salt, mixing until the glaze is smooth and homogeneous. Let it cool.
Decorate the brownies:
- Cut the brownies:
- Once cooled, remove the brownie from the pan and cut into squares.
- Apply the caramel glaze:
- Pour the caramel glaze over the brownie squares, allowing it to run slightly down the sides for a decorative effect.
- Plating:
- Let everything rest for a few minutes to allow the icing to settle, then serve the brownies.
Our advice:
For an extra touch, you can add a pinch of fleur de sel on the caramel glaze or decorate with whole hazelnuts.
