
Ingredients:
- 500 ml whole milk
- 250 ml fresh cream
- 150 g sugar
- 4 egg yolks
- 100 g pure organic hazelnut pasta (UnoBIO)
- 1 teaspoon vanilla extract (optional)
Directions:
- Preparation of the custard base:
- In a small saucepan, heat the milk over medium heat until warm, but not boiling. Remove from heat.
- In a separate bowl, whisk the egg yolks and sugar until light and fluffy.
- Slowly pour the hot milk into the egg and sugar mixture, stirring constantly to prevent the eggs from cooking.
- Transfer everything back into the saucepan and cook over low heat, stirring constantly, until the cream thickens slightly and coats the back of a spoon. Do not let it boil!
- Adding the hazelnut paste:
- Once the custard has thickened, remove from heat and add the pure organic hazelnut paste (UnoBIO). Mix well until you get a smooth mixture.
- If desired, add vanilla extract for an extra aromatic touch.
- Cooling:
- Let the mixture cool completely to room temperature, then transfer it to the refrigerator for at least 2-3 hours, or until very cold.
- Creaming:
- If you have an ice cream maker, pour the mixture into the machine and follow the manufacturer’s instructions until you obtain creamy ice cream.
- If you don’t have an ice cream maker, pour the mixture into a container suitable for freezing and place it in the freezer. Stir vigorously every 30-40 minutes to break up the ice crystals, repeating this operation for about 3-4 hours, until the ice cream has the desired consistency.
- Plating:
- Once ready, let the hazelnut ice cream rest for a few minutes at room temperature before serving, so that it is easier to portion.
